The trick to a great stir-fry at home is having every ingredient prepped and within arm's reach before the pan gets hot. Once you start cooking, the whole thing is done in three or four minutes.

Ingredients

  • 1 lb (450 g) flank or sirloin steak, thinly sliced against the grain
  • 1 tbsp cornstarch
  • 3 tbsp soy sauce, divided
  • 1 tbsp neutral oil, plus more for the pan
  • 4 cups broccoli florets
  • 1 red bell pepper, sliced
  • 3 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp toasted sesame oil
  • Sliced scallions and sesame seeds, to serve
  • Cooked jasmine rice, to serve

Method

    Toss the sliced beef with the cornstarch, 1 tbsp soy sauce and 1 tbsp oil. Let sit 10 minutes.

    Whisk together the remaining 2 tbsp soy sauce, oyster sauce, brown sugar, sesame oil and 3 tbsp water.

    Heat a large skillet or wok over high heat until smoking. Add a splash of oil, then the beef in a single layer. Sear 1 minute per side and remove to a plate.

    Add a little more oil, then the broccoli and pepper. Stir-fry 2 minutes.

    Add the garlic and ginger, cook 30 seconds, then return the beef to the pan. Pour in the sauce and toss for 1 minute until glossy and thickened.

    Serve over rice, topped with scallions and sesame seeds.
