All the pleasure of a caesar salad, tucked into a soft flour tortilla so you can eat it one-handed. A quick pan-seared chicken breast keeps it satisfying enough for a real meal.
Ingredients
- 2 boneless, skinless chicken breasts
- 1 tbsp olive oil
- 1 tsp smoked paprika
- Salt and pepper
- 2 large flour tortillas
- 3 cups (about 150 g) chopped romaine lettuce
- ⅓ cup (35 g) grated parmesan
- ⅓ cup (80 ml) caesar dressing
- ½ cup croutons, lightly crushed
Method

Pat the chicken dry, rub with olive oil, paprika, salt and pepper.

Cook in a hot skillet over medium-high heat for 5–6 minutes per side, until the internal temperature reaches 165°F / 74°C. Rest 5 minutes then slice.

In a bowl, toss the romaine with the dressing, parmesan and croutons.

Warm the tortillas briefly, spoon the salad down the center, top with sliced chicken.

Fold in the sides and roll tightly. Slice on the diagonal and serve.
Chef's tips
- Warming the tortillas for 15 seconds makes them fold without cracking.
- For a lighter version, swap half the caesar dressing for plain Greek yogurt.
